The pizza plank

The Pizza Plank (which is also referred to as the Family Griller) is the largest plank cooking surface in the market.  It can fit a 12" pizza which is ideal for a home made version.  I personally load it up with fresh mushrooms, lots of olives, Italian sausage and onions along with plenty of sauce and cheese.  Then that wonderful smoky flavor adds just the right touch which complements the crust, sauce and cheese for truly a great taste experience.  TRY "RIC0TTA CHEESE & TOMATO PIZZA"

As the Family Griller, this large cooking surface can handle a nice family sized Prime Rib with grilled asparagus and onions; a butterflied chicken with corn on the cob; a couple nice slabs of St. Louis Ribs to name just a few...

The Best Beer Can Chicken EVER!!!  So far, this has not even been a debate.  The chicken is protected from charring and drying out and thus the meat is always so juicy and tender and then the addition of that wonderful cedar smoke flavor blows them away.

The planks have a hole in the center to hold the beer can, soda can, juice...whatever tickles your fancy and the soaking, of course, causes just enough swelling on the wood to secure that standard 12 oz can size and prevent it from moving.  Then just let that bird sit and enjoy the sensation with its legs propped up like a tripod.  Then season big bird like always and let the "stoking begin".

Multiple Flavored Planks - Our Mix & Match...

You have to first try food that has been smoked.  Most of us already have.  Hickory smoked bacon, smoked oysters,  smoked barbecue sauce, smoke salmon, herring...and just about any other fish.  Cooking on ;our "Mix & Match" planks and smoked wraps is really no different than cooking in the oven in many ways.  In fact, in our home, we use the BBQ more than the oven, especially in the summer.  We heat our leftovers on planks in the BBQ because we like adding the flavor of the smoke and there is no better way to get all-natural-flavor than cooking right on the surface of the wood.  You just have to try it on a few different wood surfaces to see what works best for you.

 

If you click here you can get an idea of what flavor you can expect from each smoking wood.  And understand that not all woods are good cooking woods so you need to be aware of that.  But I can tell you that I cook on wood a lot because I don't want my food dried out, I don't want too much charring, and I like my meat juicy and tender.  And cooking on planks and wraps takes care of that.  We call it "stoking" but it is the steam and smoke working together that holds in those natural juices.  (We could have called that "Smeaming" but who would do that?)  A very intuitive friend of mine put it this way, "I don’t anticipate walking into a fine dining establishment anytime in the near future and seeing “Smeamed Duck with Bearnaise Sauce” on the menu."
