Soaking of the Family Griller...

 

1 Family Griller/Pizza Plank by Kelly Craig

 

Soaking Instructions:

 

Submerge plank in water making sure plank is complete submerged entire 1 hour.  When done, lightly towel dry off excess and rub cooking side of plank with olive oil or spray with non-stick spray.

If you are making a pizza crust from scratch, it is suggested that you cook the crust at 250 degrees in your oven for just long enough for the crust to be firm.  Then remove and place on plank.  This will prevent the crust from sticking to the plank.  Otherwise we suggest using Mary's pre-cooked pizza dough or Boboli.  

While soaking plank, prepare ingredients for your pizza.

Gas Grill:  At about 10 minutes before assembling your pizza preheat grill to 400 degrees with burners on one side of BBQ. (gas)

Charcoal Grill:  Pile coals on one side and ignite to create hot bed of white coals to get temperature to 400 degrees.

Cedar Smoked Bacon, Asparagus, & Goat Cheese Pizza

Ingredients:

5 thick slices of hickory or pecan smoked bacon cut in 1" long pieces

1 c of cherry tomatoes halved

1 lb. of shredded mozzarella cheese

11 oz. log of goat cheese

1 t red pepper flakes

1 c of fresh chopped asparagus

ground pepper to taste

Mary's 12" round prepared pizza dough

Cook bacon in frying pan to release grease but do not cook crisp.  Then drain fat.  Place pizza dough on cooking side of plank and top with mozzarella cheese, bacon, asparagus and tomatoes and dot with goat cheese.  Season with red pepper flakes, and black pepper to taste.  Bake for 15-20 minutes on plank over indirect heat maintaining 400 degrees.  Crust should be brown and cheese melted.  Remove when done and let cool for about 10 minutes then cut and serve.

Basic Meat Pizza

Ingredients:

1/2 lb. ground beef

1 small onion chopped

1 can (15 oz) tomato sauce

3 tsp dried oregano

1 tsp dried basil

1 medium green pepper diced

1/2 small can of chopped olives

10-12 sliced mushrooms

2 c shredded mozzarella cheese

Directions:

Cook ground beef and onion in frying pan over medium heat meat till meat is not pink then drain fat.  Mix tomato sauce , oregano, and basil then spread over crust.  Top with meat mixture , green peppers chopped olives and mushrooms and mozzarella cheese.  Place on grill over direct heat for about 2 minutes tops then move to indirect heat and close lid.  Cook for 18-20 minutes or until crust is lightly browned.  Remove, cut and serve.

To crisp up the crust further if you prefer, place back over direct heat for another minute or two then remove, cut and serve.

With this basic recipe you can substitute the beef with Italian sausage or pepperoni or smoked ham or chorizo, etc.  All of these choices are complemented nicely with the cedar smoke flavor.

Beer, white wine, red wine, soda, fruit juice, coffee, tea...then if adding tequila, or bourbon or any other spirit be cautious and mix with non alcohol at a 5 to 1 ratio with alcohol at 1.
