  • 100% Pacific Northwest Coastal Cedar.  Soak thoroughly for 30-45 minutes before placing food on plank. Then start over direct heat for 1-2 minutes while watching carefully and dowsing any flame with a spray bottle of water. Once plank begins to smolder, move plank and food to indirect side of grill and shut lid. Then cook with lid closed till food is done.  Use meat thermometer to gauge:  fish internal at thickest point - 145 degree; chicken, pork and beef 165 degrees internal.  Keep grill temporature between 350-400 degrees .
